From the chemical analyzes of the grapes of plants treated with ZEI™ it is possible to see that the grapes have a higher content of total polyphenols, measured in mg/kg of grapes than grapes from untreated plants.

The same result can be observed from the spectrophotometric analyses.

Grapes from plants treated with ZEI™ are richer in anthocyanins than grapes from conventionally treated plants.
The wines obtained from plants that used the ZEI™ protocol were subjected to spectrophotometric scanning and compared with those obtained from conventional treatments.
It was observed that at a wavelength of 520 nm, there is a greater absorption of radiation by wines obtained from the plants treated with ZEI™ protocol, which will therefore be more colourful, and give greater chromatic stability when compared to conventional ones.
The higher content of anthocyanins and total polyphenols also makes it possible to shorten the maceration period, and still obtain wines with great structure and longevity.
The reduction of the extraction times of anthocyanins and total polyphenols allows for the lowering of the costs associated with this phase of the winemaking process.
The use of the ZEI™ protocol will produce softer and more balanced wines and bring economic advantages due to cost reduction during the winemaking process.
